Cajun Sausage and Rice

Ingredients

  • 1 box (8 oz) red beans and rice mix
  • 2 bell peppers, cut bite size
  • 4 fully cooked spicy beef sausages (from a 14 oz package), sliced
  • Sliced scallions

Preparation

Step 1

1. Bring 3 cups water to a boil in a large saucepan. Add rice mix, reduce heat, cover and simmer 10 minutes.

2. Meanwhile heat 1 tsp oil in a large nonstick skillet. Add peppers; saute over high heat 5 minutes or until lightly charred in a few places. Add sausage; saute 3 minutes until lightly browned.

3. Place mixture on rice (don't stir), cover and simmer 10 minutes until rice is tender. Stir to mix; sprinkle with scallions.
