Chicken Rice Casserole

Ingredients

  • 1/4 cup margarine
  • 1/3 cup flour
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 cup milk
  • 1 cup chicken broth
  • 2 cups cut up cooked chicken
  • 1 1/2 cup cooked white or wild rice
  • 1/3 cup chopped green pepper
  • 1/4 cup slivered almonds
  • 2 Tbl chopped pimiento
  • 1 4-oz can mushrooms drained
  • 1/2 cup green olives
  • Parsley (garnish)

Preparation

Step 1

Preheat oven to 350

Heat margarine in 2 qt saucepan until melted. Stir in flour, salt and pepper. Cook over medium heat stirring constantly until bubbly; remove from heat. Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Stir in remaining ingredients.

Pour into ungreased 2 qt casserole dish. Bake uncovered 40 to 45 minutes or until bubbly. Garnish with parsley.
