Corn Bread- Sharon G.'s Recipe

This recipe is courtesy of our neighbor/my husband's co-worker, and it was requested at all of his potlucks at work.

Ingredients

  • 3 Boxes of Jiffy Corn Bread Mix OR a triple batch of my Jiffy Corn Muffin Mix Clone
  • 1 Can creamed corn
  • 3 Tablespoons honey
  • 1 Tablespoon melted butter
  • 3 eggs
  • Scant 1 cup milk
  • Chopped jalapenos to taste (optional)

Preparation

Step 1

1. Preheat oven to 400 degrees F.

2. Mix all ingredients above until just evenly combined. Batter will be slightly lumpy. For best rise, let batter rest for 3 or 4 minutes. Stir once or twice after rest.

4. Fill muffin tins 1/2 full.

5. Bake 15-20 minutes. Makes 6 muffins.
