  • CUPCAKES:
  • 1 box lemon flavored cake mix
  • 1 (12-ounce) can strawberry soda
  • FROSTING:
  • 1 (4-ounce) stick unsalted butter, softened
  • 1 (6-ounce) package softened cream cheese
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 sliced strawberries, optional

Step 1

CUPCAKES:
Preheat oven to 325°F for a dark, non-stick cupcake pan or to 375°F for shiny, metal cupcake pan. Line two regular cupcake pans with the cupcake liners of your choice.
In a large bowl combine the whole box of cake mix and the can of strawberry soda. Mix until well blended and the soda is no longer frothy.
Fill each cupcake liner halfway full with the cake mixture and bake for 12 to 17 minutes. Cool completely before frosting.

FROSTING:
Cream together the butter and the cream cheese. Then, add the sugar one cup at a time until it is incorporated. Add the vanilla and mix well. Store in the fridge until you are ready to use. Garnish iced cupcakes with the sliced strawberries if you'd like.
