Ingredients

  • Muffins:
  • 2 1/2 cups flour
  • 2 cups granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 cups chopped apples, peeled
  • Cream Cheese layer (optional):
  • 6 ounces cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 2 teaspoons vanilla
  • Streusel:
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 5 tablespoons cup cold butter, cut into small cubes

Preparation

Step 1

Preheat oven to 350 degrees. Line a muffin pan with liners, or spray pan with cooking spray

Prepare muffin batter by whisking together flour, granulated sugar, pumpkin pie spice, baking soda and salt. In another bowl mix together eggs, pumpkin and oil. Mix these wet ingredients in with the dry ingredients until incorporated. Stir in chopped apples. Fill muffin cups 2/3 full.

If choosing to make the cream cheese layer, in mixing bowl beat cream cheese, sugar, milk and vanilla together until smooth. Place a heaping teaspoon of mixture on top of pumpkin batter.

To make streusel layer, using a fork or pastry cutter, combine all ingredients until they form a coarse crumb. Sprinkle evenly over all the muffins.

Bake for 20-25 minutes until a toothpick comes out clean.
