Ingredients
- 3 Eggs, beaten
- 1 1/2 Cups Sugar
- 1/2 Cup Butter, melted
- 1 Tbs. + 1 tsp. Lemon Juice
- 1 tsp. Vanilla
- 1 1/3 Cups Flaked Coconut
- 1 Unbaked Pie Crust
- Whipped Cream or topping
- 1 Cup Flaked Coconut, toasted

Preparation
Step 1
Combine eggs, sugar, butter or margarine, lemon juice and vanilla, mixing thoroughly. Stir in 1 1/3 cups coconut. Pour filling into pastry shell. Bake at 350 degrees for 40-45 minutes or until firm. Cool slightly before serving. Serve with dollops of whipped cream or topping and garnish with toasted coconut. Serves 6-8.
