Scalloped Potatoes and Ham

Boil sliced potatoes for a few minutes to save cooking time. Just drain and slightly cool before assembling.
Ingredients
- 1 1/2 lb Russet Potatoes, washed
- 1 Tbsp butter
- 1/2 yellow onion, diced
- 1 1/2 cups diced ham
- 3/4 cup half-n-half
- 3/4 cup heavy cream
- 1/8 cup flour
- Pepper to taste
- 1/2 cup grated Cheddar cheese
- 1/2 cup grated Monterrey cheese
Preparation
Step 1
1. Preheat oven to 350 degrees.
2. Heat butter in skillet. Add onions and cook for 1-2 minutes, or until they start to turn translucent.
3. Add ham and cook for 3-4 minutes. Remove from heat and set aside
4. In a microwave safe container, combine half-n-half and cream and microwave for 30 seconds or until no longer cold. Whisk in flour and pepper until totally combined. Set aside.
5. Combine two grated cheeses and set aside.
6. Slice potatoes into very thin slices.
7. Layer 1/3 of the potato slices into a buttered casserole dish. Sprinkle on 1/3 of the ham/onion mixture, then 1/3 of the cheese, and then pour on 1/3 cream mixture.
8. Repeat this 2 more times. Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 20 minutes.Serve
