Zucchini Fritters

Ingredients

  • 2 c shredded zucchini (2 small)
  • 1/2 t minced garlic
  • 1/2 t dried oregano
  • 1/2 t dried basil
  • 1 handful fresh parsley
  • salt and pepper to taste
  • 1 egg or 1/4 c egg substitute
  • 3/4 c flour or wheat flour
  • 1/2 c oil

Step 1

Wash zucchini and cut the ends off. Using the large holes, grate the zucchini.

Combine the garlic, oregano, basil, salt and pepper in a bowl. Stir to combine with zucchini. Taste and salt and pepper to taste. It should be stronger than you like cuz once you add the flour and egg, it will be diluted.

Whisk the egg and add it to the zucchini along with the flour.Stir until everything is combined. The texture should be similar to cake batter.



Heat 1/2 c oil in small skillet until very hot. To test the temperature, drop a small piece of the batter into the oil, it should bubble heavily. Should not be smoking. Drop the batter into the oil, one spoonful at a time. Fry the fritters on each side until deep golden brown. Let the fritters drain on a paper towel covered plate.
