Pumpkin Flan

Ingredients

  • 1 cup sugar
  • 1 (14 ounce) can Sweetened Condensed Milk
  • 2 (12 ounce) cans Evaporated Milk
  • 5 whole eggs, beaten
  • 1 (15 ounce) can solid pack pumpkin
  • 2 teaspoons pumpkin pie spice

Heat oven to 325 degrees.

Cook sugar in a small skillet over Medium-High heat, stirring occasionally, until melted and golden in color.

Pour caramelized sugar into a 9 x 13-inch-baking dish and tilt dish so that caramelized sugar is evenly spread; set aside. Caramelized sugar will crackle as it cools.

Combine Condensed Milk, Evaporated Milk, eggs, pumpkin, cinnamon and 1/2 cup water in a large bowl: stir well. Pour custard mixture into caramel-coated baking dish and place inside a larger baking dish.

Fill outside baking dish halfway with water.

Bake flan in water bath on center oven rack for 1 hour and 15 minutes. The flan is ready when a knife inserted in the center comes out clean.

Carefully remove baking dish with flan from baking dish with hot water. Cool flan for 20 minutes. Serve warm or chilled.
