Crock Pot Mushroom barley Soup

Ingredients

  • 2 cups beef broth
  • 8 cups chicken stock
  • 1/2 cup baby carrots, cut into rounds
  • 2 stalks celery, thinly sliced
  • 10 ounces white mushrooms, sliced
  • 8 ounces crimini mushrooms, sliced
  • 1/8 cup dried porcini mushrooms
  • 2 tbsp. sherry
  • 1 tsp. dried minced onion
  • 1 tsp. fine sea salt
  • 1/4 tsp. dried thyme
  • 3/4 cup barley,raw

Preparation

Step 1

1. Place the beef broth,chicken stock,carrots,celery,mushrooms,sherry,minced onion,salt, and thyme into the crock pot. Stir to mix all ingredients.
2. Add the barley.
3. Cover and set on high for 5-6 hours.
