Cindy - this is enough pastry for two 9" pies...the KA flour makes it special. If you are baking the shell to fill, I bake at 400 degrees until it has browned...10 or 15 minutes usually. I roll out the crust between two sheets of parchment paper that have been slightly coated w/flour.

Ingredients

  • 3 cups flour
  • 1 1/2 teaspoons salt
  • 1 cup plus 2 tablespoons shortening ...I use Crisco sticks
  • 6 tablespoons iced water

Preparation

Step 1

Mix flour and salt together. Cut in the Crisco and blend until the texture resembles cottage cheese. Add water one T at a time, mixing after each addition. Form into a ball and then stretch out the shape before you begin to roll into a circle. Peel off the top layer of paper and invert in your dish, then discard the paper that is now on top. Handle as little as possible and use as little flour as possible...too much makes the crust tough.
