Ingredients
- 2 pieces chicken theigs with skin on
- 2 pieces chicken thieigs with skin off
- 3 large turkey necks
- 6 large carrots
- 4 stalks celery
- 1 large zucchini
- 2 parsnips
- 3 parsley roots
- 1 turnip
- 1 onion
- 1 medium sweet potato
- 1 tbsp. chicken soup mix
- 14 cups water
- 3 1/2 tsp. salt
- 1/2 tsp. black pepper
Preparation
Step 1
1. Rinse the chicken and turkey necks and place on bottom of a 8 quart pot.
2. Peel carrots and cut in half. Wash celery and cut in half. Peel zucchini and slice into 4 pieces. Peel parsnips, turnip, onion, parsley roots, and sweet potatoes and leave whole. Place all vegetables in pot around chicken.
3. Fill pot with water, and add spices and soup mix.
4. Bring to a boil and then lower flame and simmer slightly covered for 2 1/2 hours.
