Split Pea Soup

Ingredients

  • 1 lb (2 cups) dry split peas
  • 1 1/2 quarts water
  • ---------------
  • 1 carrot diced
  • 1 small potato - cubed
  • 1 small onion, chopped
  • 8 - 10 oz ham portions
  • 3 qts water
  • salt
  • pepper
  • 12 oz can evaporated (skim )milk
  • 2 T cornstarch

Preparation

Step 1

1. Soak peas in 1 1/2 qts water overnight; drain
2. Add remaining ingredients; simmer on stove 4 - 5 hours
3 Combine milk and cornstarch; add to soup and cook until thickened;season with salt and pepper as desired.
