Sweet Potato Veggie Burger (skinny)

Ingredients

  • 2 cans cannellini white beans, drained
  • 1 large sweeet potato, baked/peeled/mashed (about 2 c)
  • 2 T tahini
  • 2 T maple syrup
  • 1 t lemon pepper seasoning or cajun seasoning
  • 1/4 c wheat flour
  • optional cayenne, black pepper
  • panko crumbs
  • safflower oil for pan
  • whole wheat buns
  • dijon mustard, avocados, onion, olive oil

Preparation

Step 1

Bake sweet potato. Peel, place in large mixing bowl.

Add drain beans to mixing bowl and mash both together. Mash in seasoning, flour and any additional seasoning you want. Mixture will be quite soft and moist. You should be able to make a patty but if not, add flour or bread crumbs.

Heat 1 T safflower oil in pan over high heat.

Form a patty and coat in panko crumbs. Thick coating. Then drop the patty in the pan. Repeat until pan is filled an dcook until browned on both sides.

You could also bake but use less panko crumbs.

Transfer cooked patties to paper towel and cool for a few min. Serve on toasted buns with lots of toppings.
