Scrumptious Broccoli Casserole

I just love Broccoli Casserole, and it just so happens that it's my favorite comfort food. This is the only recipe I like to use when I make it. I've made Broccoli Casserole numerous times, and I think this is by far the best recipe ever, so so delicious! Please enjoy it, I know I sure do!!!

  • (10 oz.) packages frozen chopped broccoli
  • 1
  • can cream of mushroom soup
  • 1

  • mayonnaise
  • 1/2
  • tsp
  • ground black pepper
  • 8 oz.
  • shredded cheddar cheese
  • 1
  • medium onion, chopped
  • 2
  • eggs, beaten
  • 1
  • stack ritz or townhouse crackers
  • squeeze parkay margarine

Cook broccoli according to directions. Drain well. Mix broccoli, soup, mayonnaise, pepper, cheese, onion, and eggs together. Pour into a greased 1 1/2-2 quart casserole dish.

Crush the crackers in a gallon sized ziploc bag, then mix with margarine. Sprinkle the mixture onto the casserole. Bake in preheated 350 degree oven for at least 35-40 minutes, or until it's a light golden brown and bubbly. Enjoy!!!
