Linguine with shrimp scampi

Ingredients

  • vegetable oil
  • kosher salt
  • 3/4 lb linguine
  • 3 T unsalted butter
  • 2 1/2 T good olive oil
  • 1 1/2 T minced garlic (4 cloves)
  • 1 lb large shrimp, peeled and deveined
  • 1/4 t fresh ground black pepper
  • 1/3 C fresh parsley leaves
  • 1/2 lemon, zest grated
  • 1/4 C fresh lemon juice (2 lemons)
  • 1/4 lemon thinly sliced into half rounds
  • 1/8 t hot red pepper flakes

Preparation

Step 1

Drizzle some oil in large pot of boiling water, add 1T salt and linguine and cook for 7-10minutes, according to package

In another heavy bottomed pan, melt butter and olive oil over medium heat. Add garlic, sauté 1 min. Add shrimp, 1 1/2t salts and the pepper and sauté until shrimp just turn pink, act 5 min stirring often. Remove from heat and add parsley, lemon set, lemon juice, lemon slices and red pepper flakes. Toss to combine. After pasta is done, add immediately to sauce, toss well and serve
