Oreo Stuffed Cupcakes Recipe:

Ingredients

  • Cupcakes:
  • 1 box of white cake mix {or make from scratch}
  • 4 eggs
  • 1 cup buttermilk {1 tablespoon of vinegar in measuring cup add milk to fill and let set for a couple minutes}
  • 1/3 cup oil
  • 1 cup crushed Oreo cookies
  • 24 regular size Oreos
  • Directions:
  • Mix cake like you normally would with eggs, buttermilk and oil
  • Place cookies in a resealable bag and crush with a rolling pin
  • Fold into cake batter

Preparation

Step 1

Line cupcake pan with liners and place an Oreo in the bottom of each liner
Add batter to top of Oreo
Bake at 350 degrees for about 12-15 minutes or until a toothpick inserted comes out clean
Note: they make take a little longer than normal before of the Oreos
Cool completely
Oreo Frosting Recipe:
1 {8 oz} tub Cool Whip, thawed
1/4 - 1/3 cup Marshmallow Fluff {found in the baking aisle near the marshmallows}
1/2 cup crushed Oreos
Directions:
Place Cool Whip in a large bowl and stir until fluffy
Add Marshmallow Fluff and beat with an electric mixer until fluffy, about 2-3 minutes
Fold in Oreos
Decorate:
Fit a decorator bag with a Giant Round Tip {you want a large opening so the Oreos chunks don't get caught}
Fill bag with frosting and pipe onto cupcakes
Top with a mini Oreo
