Ingredients
- 3 pounds beef boneless round steak, 1/2 inch cubes
- 3 tablespoons vegetable oil
- 4 cups water
- 1 tablespoon paprika
- 1 tablespoon dried oregano
- 2 tablspoons cumin
- 1-2 teaspoon red pepper
- 1/2 teaspoon salt
- 1 large bay leaf
- 3 large garlic cloves, crushed
- 1 large onion, chopped
- 1 (8 oz.) can tomato sauce
- 1 cup shredded cheddar
- 1 cup sour cream
- 1 medium avocado, chopped
Preparation
Step 1
Cook and stir half of the beef at a time in oil in a Dutch oven over medium heat until light brown. Stir in remaining ingredients, except sour cream, cheddar cheese and avocado. Heat until boiling; reduce heat. Cover and simmer 1 hour, stirring occasionally.
Uncover and simmer 1 hour, stirring occasionally. Uncover and simmer; stir occasionally until mixture thickens, about 1 1/2 hours longer. Remove bay leaf. Serve with sour cream, cheddar cheese and avocado.
