Ingredients
- 1/2 Cups of Olive Oil
- 3 Juiced Limes
- 5-6 Cloves of Garlic
- Fresh Thyme
- Fresh Oregano
- Fresh Cumin
- 1-2 Serrano Chilis Puree
- 1 Bunch of Green Onions
- 1/2 Bunch Cilantro
- Ground Pepper
- Kosher Salt
Preparation
Step 1
Run whole chicken with course Ground Pepper and Kosher Salt. Slice 1 Bunch of Green Onions and 1/2 Bunch of Cliantro put chickken in large bag and pour it all into the bag and marinate over night. Cook in a rotisserie oven. Or cook in the oven just baste with the left over marinate or put in a cooking bag. Also works great for chicken thighs on the BBQ. You could probably do it in a crock pot too. Make simple sides like Cilantro Brown Rice and Zucchini and Red Bell Peppers sauteed with Olive Oil and a shallot with Oregano sprinkled.
