Ingredients

  • 4 egg yolks
  • 1 egg
  • 1/2 c sugar
  • 1 T dry Marsala wine
  • 8 oz mascarpone cheese
  • 1 c heavy whipping cream
  • 2 T sugar
  • 8 oz espresso, cooled
  • 24 ladyfingers (savioardi)
  • cocoa powder

Preparation

Step 1

Put egg yolks, egg, sugar in double boiler. Whisk eggs constantly until they thicken into a light custard. Add wine, whisk more. Turn out of bowl and into pan to cool. Cream mascarpone, set aside. Beat whipping cream to soft peak stage. Add sugar, beat to stiff peak stage. Fold mascarpone into whipped cream, then fold that mix into cooled egg mix.
Use a pan or glass dish 8x8 in. Put a thin layer of mix over bottom of pan. Working one by one, dip ladyfinger into cooled espresso, a quick dip. Fit 12 ladyfingers into pan, layer half of mix over. Fit 12 more dipped ladyfingers into pan, layer rest of mix and smooth it out. Sift the cocoa powder liberally over top. Cover and chill overnight (atleast 4 hrs). Serve.
