Mama J's Bruschetta

Ingredients

  • 6 Roma Tomatoes
  • 2 cloves garlic - minced
  • 1 Tbsp EVOO
  • 1 Tsp Basalmic
  • 12-15 Fresh Basil leaves - chopped
  • 1/3 C. Italian Vinaigrette dressing
  • 1/3 C. shredded Parmesan
  • 1 8oz pkg cream cheese
  • 1 loaf baguette bread - sliced thin

Preparation

Step 1

-Mix cream cheese, basil (6-8 leaves), and dressing in food processor until smooth. Empty into mixing bowl
-Mix garlic, EVOO, dressing, remaining basil, and tomatoes in food processor for 15-20 seconds
-Toast baguette slices in oven on broil for 10-12 seconds. Flip and toast other side.
-Spread pesto mixture on toast and top with tomato mixture and Parmesan cheese.
-Place under broiler long enough to melt cheese on top. Remove, and serve hot.
