Swordfish

Ingredients

  • 1 lb swordfish fillet
  • 2 Tbsp olive oil
  • 1 garlic clove, finely minced
  • 1/2 C fresh basil, finely minced
  • 3 Tbsp fresh lemon juice
  • salt and pepper, to taste
  • 1/4 C red bell pepper, minced

Preparation

Step 1

Preheat oven to 450F. Mix olive oil, garlic, basil, and lemon juice in a bowl. Cut foil large enough to cover fillet, allowing ample foil for folding top and ends. Lay fish on foil, pull up sides and pour olive oil mixture over fish. season with salt and pepper. Tightly fold foil around fish. Place packets on a cookie sheet.
Bake packets for 12 minutes, or until internal temp. reaches 145F. Carefully open foil and garnish with red bell peppers.
