Beef ribs and sauce

Ingredients

  • 24 Prime Rib beef bones seperated
  • 2 cups (500ml) Ketchup
  • 1 cup (250ml) Yellow onion, grated
  • 1 cup (250ml) Red apple, grated
  • 1/2 cup (250ml) Apple cider vinegar
  • 1/2 cup (125ml Brown sugar
  • 1/2 cup (125ml) Honey
  • 1/2 cup (125ml) Molasses
  • 2 t (30m) Tabasco sauce
  • 1 t (5ml) Cumin, ground
  • 1/2 cup (125ml) Sambal (garlic chili paste)
  • 1/2 cup (125ml) Soy sauce,dark
  • 1/4 cup (60ml) Worchestershire sauce
  • 2 T (30ml) Oregano or sage, dry and crushed
  • 1/4 cup (60ml) Chipotle hot sauce (smoked jalapenos in tomato sauce
  • 2 T (30ml) Liquid natural mesquie smoke essence (Optional)

Preparation

Step 1

Combine all ingredients (except the ribs)in a medium bowl and mix well. Prepare two cookie sheets by covering with tin foil, topping each parchment paper

Lay ribs onto sheets. Brush ribs to coat with 1/2 of sauce. Place in a 250-275F oven and baste with remaining sauce every 20-25 min. for 3-4 hours. Rotate pans, at least once, from top to bottom. The ribs are ready when the coating is a deep molasses brown and the bones are beginning to shed the meat
Can be served hot or cold.
