Ingredients

  • 2 cloves garlic, minced
  • 1/2 cup pine nuts or pumpkin seeds
  • 1/2 cup fresh cilantro
  • 1/2 cup raw, diced onion
  • 1 cup cooked black beans
  • 1 tsp salt
  • 3 cups cooked quinoa (1 cup dry)
  • 1/2 cup diced sweet red pepper
  • Bread crumbs or rice flour
  • 2 Tbs. olive oil
