Ingredients
- 1/2 cup diced jarred roasted red bell peppers
- 1/2 cup diced pitted green olives
- 1/2 cup grated Pecorino romano cheese
- 2 diced scallions
- 2 tbsp extra-virgin olive oil
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 pound white button mushrooms, cleaned and stemmed
- 1/4 cup finely chopped fresh basil leaves
- May use prepared tapenade with the mushrooms and basil if desired**
Preparation
Step 1
Preheat oven to 400 degrees F
Mix together the roasted red bell peppers, olives, cheese, scallions, olive oil, salt and pepper
Line a baking sheet with parchment paper, place the mushrooms on sheet cavity side up. Spoon filling into each mushroom. Bake for 20 minutes.
When done baking, sprinkle with fresh basil and serve.
