Ingredients
- 1 cup leftover white cake or vanilla wafer crumbs
- 1 cup sifted confectioners' sugar
- 1/4 cup unsweetened cocoa powder, or to taste
- 3 tablespoons light corn syrup
- 1/4 cup bourbon
- 1 cup chopped pecans
- unsweetened cocoa powder, for coating
Preparation
Step 1
Combine crumbs, confectioners' sugar, ¼ cup cocoa powder, corn syrup, and bourbon in a food processor or with an electric mixer. Blend until thoroughly mixed. Roll tablespoonfuls of the mixture to form small balls, (the mixture should be soft, if it is too dry to roll easily, add a little more corn syrup). Spread cocoa powder on a plate and roll the balls in it to coat them. Store the bourbon balls in an airtight container and refrigerate; or you can freeze them.
