Pan roasted strip steak

Ingredients

  • 2 8 oz Strip steaks
  • 3 tablespoon Olive oil
  • 1 tablespoon Salt
  • 1 tablespoon Peppe

Preparation

Step 1

Towel dry room tempature steaks. Rub both sides with olive oil and season with fresh ground pepper and salt.
Put oil in pan and heat until shimmery over medium high heat. Oil might smoke a little, reduce heat and put steak into pan pretty side down and move around a little and smush it down a little in the oil. Sear 2-3 minutes a side.

Place pan in a preheated 425 degree oven for 6-7 minutes for medium rare. Check internal temp of 135-140 degrees.

WATCH OUT FOR HANDLE IT WILL BE HOT

Pan drippings can be made into a sauce and served over steak with herb butter
