SALMON WITH ANCHO CHILE GINGER SAUCE

Ingredients

  • 1/4 cup rice wine vinegar
  • 1 inch piece fresh ginger - peeled and julienned
  • 1 TBS ancho chili powder
  • 1 TBS honey
  • 1/2 cup vegetable oil
  • Salt and freshly ground pepper to taste
  • 4 - 6 salmon fillet
  • Olive oil
  • Chopped cilantro

Preparation

Step 1

Combine first four ingredients and set aside. Rub salmon with olive oil and season with salt and pepper. Roast at 425 for 10 to 12 minutes. Drizzle sauce over salmon and garnish with chopped cilantro
