Garlic Scallops over Pasta

Ingredients

  • 3/4 lb. sea scallops (10oz)
  • 1/4 tsp. salt
  • 1/4 tsp. ground pepper
  • 3 cloves garlic, minced, divided
  • 2 shallots, chopped
  • 1 tsp. olive oil
  • 1/4 c. veggie broth or dry white wine
  • 1/4 c. fresh lemon juice
  • 1/4 c. chopped fresh parsley
  • cooked whole wheat pasta
  • fresh grated parmesan cheese
  • fresh parsley sprigs

Preparation

Step 1

Sprinkle scallops w/ s&p; toss w/ 1 clove minced garlic. Coat large nonstick skillet w/ nonstick cooking spray; heat to med-high heat. Add scallops and sear each side 3-5 mins. or till opaque. Remove from pan; keep warm.

Add oil to pan; cook shallots and remaining garlic over med-high heat 3 mins. or till tender. Stir in veggie broth and lemon juice; simmer 5 mins. Stir in chopped parsley.

To serve, spoon scallops over cooked pasta, if desired; top w/ sauce. Sprinkle w/ parmesan cheese and parsley sprigs, if desired.
