- 1/2 tsp baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 2 eggs, separated
- 1 cup milk
- 2 Tbsp. melted butter, plus more for cooking (or vegetable oil)
- 4 Tbsp. confectionery sugar (for dusting)
- Filling (Optional)
- 1 cup apple, peeled, cored, and grated
- 2 tsp. lemon juice
- 3 Tbsp. sugar
- 1/2 tsp. cinnamon

Step 1
For the filling:
Stir all filling ingredients together until just combined and set aside. When ready to use, drain liquid from apple mixture.
For the batter:
In a medium-sized mixing bowl, mix flour, baking powder, sugar and salt together; set aside. In a separate, medium-sized mixing bowl, whisk together egg yolks, milk, and 2 tablespoons of melted butter. Add dry ingredients and stir until just combined.l In a 3rd bowl, whisk egg whites until stiff but not dry, about 2-3 minutes. Gently fold egg whites into batter until incorporated.
Preheat puff pancake pan over medium heat for about 1 minute; when pan is h9ot, reduce heat to low. Brush pan wells generously with melted butter or oil. Fill each well with 2 tablespoons of batter. Working quickly, add 1 teaspoon filling (optional or use other filling ie. cherry jam) and cover each with a tablespoon of batter. Repeat process until all wells are filled. Fry for about 2 minutes or until the edges of the pancake turn golden brown, using two wooden skewers. quickly turn the pancake and fry for another 2 minutes. when fully cooked, transfer each pancake to a platter and allow to cool. Dust with confectionery sugar before serving.
