Ingredients

  • 2 lg. bunches of escarole
  • 3 cloves garlic dhopped fine
  • 1 lb hot Italian sausage removed from casing
  • 1/4 cup olive oil
  • 1 stalk celery chopped
  • 1 can white cannelini beans undrained

Preparation

Step 1



Fry sausage and drain. Add oil and garlic and celery to sausage. Cook for 2 mins. Add washed escarole. Sprinkle with Italian seasonings or oregano. Add 2
cans chicken broth and 1 can water. Simmer 20 mins.
