Ingredients
- 4 boneless chicken breasts
- ; Salt and pepper
- ; 11/2 tablespoons butter
- ; 1/2 teaspoon olive oil
- ; 2 cloves garlic
- ; 1/2 cup finely chopped onions
- ; 1 cup mixed mushrooms
- ; 11/2 tablespoons chopped fresh tarragon
- ; 2 tablespoons tarragon vinegar
- ; 1/2 cup heavy cream
- ; 1/4 cup chicken broth
Preparation
Step 1
Season the chicken with salt and pepper
Heat the butter and oil in a large skillet on medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side or until completely cooked through.
Remove the chicken from the heat and keep warm.
In the same skillet sauté the garlic for 30 seconds.
Add the onions and cook until they are transparent, 3-5 minutes.
Add the mushrooms and cook 6-7 minutes.
Add the tarragon, tarragon vinegar, cream, and chicken broth. Simmer 8-10 minutes or until the sauce thickens.
Add the chicken to the sauce and simmer just until heated through.
