VEGETABLES - Potato Dumplings

Ingredients

  • 2 buns (stale dried out or 1/2 french baguette stale dried)
  • 2 c water
  • 3 c potatoes (cooked and riced or left over and grated)
  • 1 tsp salt
  • 4 - 5 tbsps flour
  • 4 - 5 tbsps cream of wheat (cornmeal)
  • 1/2 tsp nutmeg
  • 1 egg
  • parsley

Preparation

Step 1

Mix potatoes, Cream of Wheat cereal, salt, & eggs. Mix well & add flour. Turn out on floured board & shape into long rope. Cut into desired size (I do 1-inch pieces). Drop into boiling chicken broth. Cook 10 minutes or until done, depends on size. Serve with sauerkraut & ribs.
