Chicken Fajitas

Ingredients

  • 4 skinless, boneless chicken breast halves, cut into strips
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 (8-inch) flour tortillas
  • 1 1/2 cups thinly sliced green, red, or yellow bell pepper
  • 2 small onions, sliced
  • 1 tablespoon vegetable oil
  • 1 tablespoon lime juice
  • 1/2 cup salsa
  • 1/4 cup sour cream

Preparation

Step 1

Combine cumin and next 4 ingredients in a large heavy-duty, zip-lock plastic bag; add chicken. Seal and shake to coat.

Heat tortillas according to package directions, keep warm.

Remove chicken from bag, discarding the seasoning mixture.

Heat 2 tablespoons oil in a heavy skillet. Add chicken and cook 2 to 3 minutes, stirring constantly. Add peppers and onions, and stirring constantly. Remove from heat and stir in lime juice.

Spoon chicken mixture evenly down center of tortillas, and fold up. Serve with salsa and sour cream.
