Chicken Tarragon

Ingredients

  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 tablespoons butter
  • 2 tablespoons sliced green onion
  • 1/2 teaspoon tarragon
  • 8 chicken breast halves, skinless/boneless
  • 1 3/4 cups chicken broth
  • 1/4 lb fresh mushrooms, sliced

Preparation

Step 1

Combine flour, salt and pepper; dredge chicken reserving flour mixture. In skillet brown chicken in 2 tablespoons butter; remove. Add 2 tablespoons butter, mushrooms, green onion and tarragon to skillet. Blend in reserved flour mixture. Gradually add broth. Cook, stirring constantly, until thickened. Add chicken, cover and simmer 20 minutes or until chicken is done.
