Cabbage Soup Recipe

Ingredients

  • 6 Large Green Onions
  • 2 Green Peppers
  • 1 or 2 cans of tomatoes (whole or diced)
  • 3 carrots
  • 1 container mushrooms
  • 1 bunch celery
  • 1/2 head of cabbage
  • 1 pkg onion soup mix
  • 1 or 2 cubes of boullion
  • 1 (48oz) can of Low Sodium V8
  • Season to taste with pepper, parsley, curry, garlic powder

Preparation

Step 1

Slice green onion, put in pot on medium heat and start to saute with cooking spray. Do this about 4-6 minutes.

Clean and cut green pepper into bite sized pieces and add to the pot.

Cut cabbage into bite sized pieces and add to pot.

Clean and cup celery, mushrooms and carrots into bite sized pieces and add to pot. Add tomatoes now too.

Add either 12 cups of water or 8 cups and 48 oz of the V8 juice. Add bouillon.

Cover and put over low heat and cook about 2 hours or until veggies are tender.
