Step 1

Get a 2 3/4 lb beef tenderloin. Preheat oven to 350. Heat 2 tbsl olive oil in frying pan with a lid. Add 1 1/4 lb small potatoes cut into half, 6 carrots sliced into rounds, 4 shallots peeled and halved and six garlic cloves and saute over medium heat. Add 2 or 3 thyme springs and 1 bay leaf, cover and cook for 15 minutes, stirring continually. Season with salt and pepper. Then heat 4 tbsp butter in oven proof roasting pan, add beef and brown on all sides over high heat, transfer to oven and roast 20 minutes. Remove from oven and allow beef to rest covered with foil for 10 minutes. Transfer roast to carving board. Deglaze paln with 1 c vegetable or beef broth, scrap up bits, mix with 4 tbsp butter until smooth. THen add vegetables to pan and cook 5 more minutes.
