Cakes: Nancy Burgess' Baked Cheesecake and from Dora's Kitchen

Ingredients

  • 3 8oz packages cream cheese, room temperature
  • 1 1/2 cups sugar
  • 4 whole eggs
  • 1 t vanilla
  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1 T brown sugar
  • 1 pint sour cream
  • Dora's Kitchen
  • 2 1/2 pounds cream cheese
  • 1 3/4 cups sugar
  • 3 T flour
  • 1/2 t orange and lemon rind
  • 1/4 t salt
  • 1/2 t vanilla
  • 5 eggs
  • 1/4 cup heavy cream
  • 1 small can crushed pineapple, drained, if desired

Preparation

Step 1

Preheat oven to 325 degrees.
Combine cream reese, eggs and vanilla with 3/4 cup sugar.
Beat at creaming speed for 25 minutes
Mix crumbs, butter and brown sugar.
Pat into bottom of 10 inch spring form pan.
Pour creamed mixture over crumbs.
Bake 40 minutes or until firm.
Beat sour cream and remaining 3/4 cup sugar at whipping speed until foamy.
Pour over cake.
Bake 5-10 minutes.

Dora's Kitchen
Cream cheese.
Mix other ingredients and add to cheese gradually.
Add eggs one at a time.
Add cream.
Do not beat much after adding cream.
Bake 12 minutes in 500 degree oven.
Reduce heat to 200 degrees and continue baking 1 hour.
Let cool before removing from pan.
Use 9 inch spring bottom pan.
