CITRUS GLAZED GRILLED SALMON

Ingredients

  • 2 Tbs butter 1/4 C sugar
  • 1 orange, peeled, cut into 8 slices 3 Tbs Grand Marnier
  • 1/2 C orange juice
  • 1-1/2 - 2 lbs. salmon fillets
  • 1 Tbs balsamic vinegar 1 Tbs finely chopped pickled ginger

Preparation

Step 1

Melt butter in skillet on medium high heat. Add orange slices and brown lightly, 1 minute per side; remove to plate. Add orange juice, vinegar, sugar and Grand Marnier to skillet. Bring to a boil, stirring to dissolve sugar, and cook 5 - 10 minutes to reduce to a syrup. Remove from heat. On heated, oiled grill or grill pan, cook salmon meaty side down for 3-4 minutes or until grill marked. Turn and cook through, brushing top with syrup. Drizzle with syrup and garnish with orange slices.
