MISO MUSHROOM SOUP

Ingredients

  • 1 Large Onion -- chopped
  • 1 Bag Small Carrots -- Chopped
  • 4 Stalks celery -- Chopped
  • Varity of Mushrooms -- Chopped
  • 4 tablespoons Miso paste -- disolved in water
  • 4 tablespoons bonito flakes -- sprinkled on top
  • Olive oil
  • 2 bundles soba noodles (Buckwheat)
  • 1 head bok choy -- Chopped

Step 1

Need an 6 or 8 quart sauce pan or big enough to hold the entire finished
contents
Put enough olive oil in a pan to stir fry the onions, carrots and celery.
Red peppers can be used as well.
When onions are translucent, mix two table spoons of miso in about 2 cups
of water, wisk or shake until the miso is disolved and pour the water/miso
mixture into the pan.
Start to add the mushrooms. Use as many different kinds of mushrooms as
you can find. Put as many of them in the soup as you want. Chop the
mushrooms large. Don't stir to hard or you will break up the mushrooms,
but mix the onions and celery with the mushrooms, don't let them stick or
burn.
Heat enough to combine the ingredients, before the mushrooms cook, add the
rest of the miso by disolving in water and adding the miso/water to the
pan.
Add enough water to cover the contents and two inches or so from top of
the pan.
Bring entire mixture to a light boil.
At the boil, reduce heat and sprinkle the bonito flakes on the top and
stir in. You may get a little "foaming". Instead of Bonito you could use
any fish bullion. Or replace equal parts of the water with clam juice or
fish stock.
Taste the broth, add bonito or disolved miso as desired. Bonito adds a
smoking flavor and the miso adds a salting flavor.
Clean the Bok Choy, chop from the green part down and take just some of
the stalk. Maybe use 1/2 down the stalk.
Return some heat, add the soba and the bok choy. Soba cooks very fast,
once it is soft, you are ready to eat.

Instead of Soba, you may use cubed up Firm Tofo or any pasta or noodles
you like. Rice is also very good in the mixture. Instead of bok choy you
can use any greens, kale is very good, you are mainly looking for the
color.
