Chicken Lettuce Cups

Ingredients
- 1/4 C. brown sugar
- 1/4 C. balsamic vinegar
- 1 Tbs. soy sauce
- 1 Tbs. fresh grated ginger
- 2 cloves of garlic, chopped
- 1/4 tsp. crushed red pepper
- 1 1/2 lb. boneless, skinless, chicken thighs, trimmed
- 3/4 C. white rice
- 1 orange
- 2 scallions, thinly sliced
- 1 small head boston lettuce, leaves washed and seperated

Step 1
In a 5qt. slow cooker, combine sugar vinegar, soy sauce, ginger, garlic and red pepper. Add chicken and turn to coat. Cook, covered, until chicken is cooked through and very tender, 6-7 hours on low or 3-4 on high. Cook rice. Meanwhile, cut away peel and white pith of ornge, Cut orange into thin half moons and place in small bowl fold in scallions. Using 2 forks, shred chicken in to medium pieces and stir into the cookingliquid. Fill lettuce leaves with rice and top with chicken mixture, then with ornage mixture.
