Almond-Herb Couscous

Ingredients

  • 3/4 c. couscous
  • 2 T sliced almonds, toasted
  • 1 c. chopped fresh chives
  • 1/2 c chopped fresh parsley
  • 1/4 c chopped fresh mint
  • 1 T olive oil
  • 2 T lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/2 tsp ground pepper

Preparation

Step 1

In small pot boil 3/4/ c water
Remove from heat
Stir in couscous
Cover and let sit 5 min
Toss with fork and mix in all other ingredients


Could top with Orange Dijon Salmon
