Ingredients

  • 1/4 C. roasted almonds
  • 4 cloves of garlic1 slice of coutnry bread, crust removed and bread torn into 1 " pieces
  • 1/4 C. flat leaf parsely, finely chopped
  • 1 1/4 lb. pork tenderloin
  • salt an pepper
  • 1 Tbs. dijon mustard
  • 2 Tbs. oliv eoil
  • 1 bunch of spinach, thick stems discarded

Step 1

Heat oven to 400. Line a rimmed baking sheet with parchment paper or foil. In food processor, roughly chop almonds and 2 cloves garlic. Add bread and parsley and pulse untol small crumbs form. Seson pork wuith sa;t and pepper, then spread with mustrd, Coat with bread crumb mixture, pressing gently to help it adhere. Transfer pork to baling sheet and orast abotu 22 minutes. Let rest at least 5 mins before slicing. Meanwhile, thnly slice the remaining 2 garlic cloves. Heat olive oil in large skillet over med. heat. Add garlic and cook stirring until golden brown, about 2 mins. Add soinach and salt and pepper and cook tossing, utnil beginning to wilt about, abotu 2 mins. Serve with pork.
