Ingredients
- 4 slices bacon
- 1 cup chopped onion
- 2 cloves garlic- minced
- 1/3 lb ground beef OR 1/3 lb finely diced round roast
- 1 cup chopped celery
- 1 cup diced carrots
- 1- 28 oz can crushed tomatoes
- 1- 28 oz can diced tomatoes
- 1 pkg onion soup
- 5 cup water
- 1/4 cup red wine
- 1 tsp oregano
- 1 tsp basil
- 1 cup chopped zucchini
- 2 cups spinach- rinsed and finely chopped
- 1/2 cup elbow macaroni
- 1-19 oz can of chickpeas-drained and rinsed

Preparation
Step 1
In a large, heavy bottom stock pot, fry bacon until slightly done.
Drain off fat and add onions, garlic and beef.
Fry until onions are translucent.
Add celery, carrots, all tomatoes, onion soup, water, wine and seasonings.
Bring to a boil.
Turn heat down and simmer soup for 20 minutes.
Add zucchini, spinach, macaroni and chickpeas.
Simmer for 15 minutes.
Serve.
