RYE BREAD (RUGBROD)

Denmark's yummy traditional rye, provides all the health benefits of a whole-grain bread, which means it fights high blood pressure, high cholesterol, diabetes and heart disease. It is also linked to superior hunger control.

Ingredients
- 1 tablespoon instant dry yeast
- 4 cups whole-grain rye flour
- 1/2 teaspoon salt
- 2 cups buttermilk
- 3 tablespoon canola oil
Preparation
Step 1
In bowl, mix yeast, flour and salt. Microwave buttermilk until lukewarm; stir in oil.
Add to flour mixture. Knead 10 minutes until smooth, adding 1/2 cup more flour if needed.
Place in oiled bowl, cover with plastic wrap and leave to rise in a warm place for 1-1/2 hours.
Knead lightly and transfer to greased loaf pan.
Cover with plastic wrap and set aside for 1 hour to rise again. Bake at 350 degrees oven for about 45 minutes, brushing with water occasionally.
Makes 36 thin slices.
