- 30 saltine crackers, crushed, about 1 cup
- 2 tablespoons sugar or sugar substitute, equivalent to 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups fat-free milk
- 3/4 cup refrigerated or frozen egg product, thawed
- 2 tablespoons butter, melted
- 4 cups frozen whole kernel corn
- snipped fresh parsley, to garnish

Step 1
Preheat oven to 325°F. Generously coat a 2-quart rectangular baking dish with cooking spray.
In a large bowl combine crushed crackers, sugar, salt, and black pepper. Stir in milk, egg, and melted butter. Stir in frozen corn.
Pour corn mixture into the prepared baking dish. Bake for 1 to 1 1/4 hours or until a knife inserted near the center comes out clean. If desired, sprinkle with parsley.
