Cheese Blintz Casserole

Ingredients

  • Batter
  • 3/4 C + 3 T flour
  • Sugar substitute to = 1/4 C sugar
  • 2 1/2 tsp baking powder
  • 1/8 tsp salt
  • 3 large eggs (or egg beaters)
  • 1/2 C reduced calorie tub margarine
  • 1/4 C skim milk
  • ----------------
  • Filling
  • 2 1/2 C lite ricotta cheese
  • 8 oz FF cream cheese
  • 2 large eggs
  • 1/4 granulated sugar
  • 3 T lemon juice
  • 1 tsp grated lemon peel
  • 1 tsp grated orange peel
  • dash salt
  • ----------
  • Sour cream
  • Sliced fruit

Preparation

Step 1

1. Preheat oven to 300; spray a 13 X 9 pan
2 Mix all batter ingredients just until blended (do not overmix); pour 1/2 of batter into pan - will need to spread it onto the bottom - will be a thin layer
3. In a separate bowl mix filling ingredients; pour filling gently over batter being careful not to mix layers
4. Spoon remaining batter onto the top - using small dollops will cover better - it will not cover entire top
5. Bake about 1 1/2 hours until golden brown and set; let stand 10 min. before cutting for easier removal from pan.
6. Serve warm or chilled - may accompany with sour cream and sliced fruit (count as extra points)
