Italian Pasta Stir-Fry

Ingredients

  • 1 pkg (8 oz) linguine, uncooked
  • 1 T olive oil
  • 2 large garlic cloves, pressed
  • 1 zucchini, sliced
  • 1 onion, chopped
  • 2 tomatoes, seeded and chopped
  • 1/4 cup snipped fresh parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/4 cup grated Parmesan

Preparation

Step 1

Cook pasta. Drain and keep warm. In large skillet, heat oil. Add garlic, stir-fry for 15 seconds; then zucchini and onion, cooking for 2-3 minutes. Add tomatoes and seasonings, and gently cook and stir 1-2 minutes or until heated through. Remove from heat, stir in pasta, sprinkle with Parmesan, and serve.
