Banana Bread

Applesauce Bread: Substitute 1 cup applesauce for bananas and add 3/4 and cinnamon with flour.

Ingredients

  • 3/4 cup sugar
  • 1/2 cup margarine or butter, softened
  • 2 eggs
  • 2 cups (4 medium) mashed ripe bananas
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation

Step 1

Heat oven to 350 degrees.
Grease BOTTOM ONLY of 9 x 5 or 8 x 4 inch loaf pan.
In large bowl, cream sugar and margarine until light and fluffy. Beat in eggs; blend in bananas, milk and vanilla. In small bowl, combine flour, nuts, baking soda and salt; mix well. Add to creamed mixture; stir until dry ingredients are moistened. Pour into prepared pan. Bake at 350 degrees for 50-60 minutes, or until toothpick inserte din center comes out clean. Cool in pan 5 minutes; remove. Cool completely on wire rack. Wrap and store in refrigerator.
