Fried Cornbread

Ingredients

  • 2 cups milk
  • 1 cup buttermilk
  • 3 eggs [beaten]
  • 1/2 cup olive oil
  • 1 can cream or whole corn
  • 1 teaspoons salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon soda
  • 1/4 cup sugar
  • 2 1/2 cups corn meal [self rising]
  • 1 cup yellow corn meal
  • 1 cup flour
  • 1/2 cup chopped jalapeno peppers
  • 1/3 cup chopped grean onions [blades also]
  • 2 cups white chedder cheese

Preparation

Step 1

Mix all indgredients together and pour into long loaf pan. 13x4x4
Bake 400* for about 1 hour
Cool, slice about 3/4 inch, butter and put on hot griddle until brown , repeat the other side .
Serve chilli over fried cornbread or use as a side to soup or beans.
